Recipe: Stir fried noodles with beef and mushrooms

In Malaysia, I would have noodles almost everyday as it's one of my favorite things to eat. So 3 weeks into our holiday here in the UK, the noodle addict in me has most certainly started craving for noodles.

Thankfully, most supermarkets here stock egg noodles (I recommend the fresh ones sold near the vegetable section) and I even managed to get the same oyster sauce that I use in KL. So dinner one of the evenings was stir fried egg noodles with beef and mushrooms. Delicious... cravings satisfied! ;)





Stir fried egg noodles with beef and mushrooms

Preparation time: 5 minutes
Cooking time: 12 minutes
Serves 2

Ingredients
400g fresh egg noodles
250g beef, cut into thin strips
3 tbsp olive oil
2 garlic cloves, finely chopped
1 onion, finely sliced
100g white button mushrooms, sliced
100g spinach
3 tbsp oyster sauce
Freshly ground black pepper


1. In a large saucepan or wok, heat oil over medium high heat. Add garlic and cook for 1 1/2 minutes until lightly golden, then add the onion and saute for 1-2 minutes.

2. Next add the sliced mushrooms and stir fry for 1 1/2 minutes, then add the beef and cook for 4-5 minutes. Season with oyster sauce and black pepper and then add the noodles and spinach and cook for another 1-2 minutes, until the noodles are heated through. Serve.

Note: This recipe works with udon noodles too. You may also serve the stir fried beef and mushrooms with rice (omit noodles).
